Ishikawa Towns Are Selected Among Top 100 Green Destinations

Nanao City and Nakanoto Town on the Noto Peninsula were recognized among the 2021 top 100 places in the world with outstanding sustainable tourism practices. The area was chosen by Green Destinations, an international non-profit organization based in the Netherlands, for its “Reduction and Effective Use of Food Waste” initiatives. The programs include food composting and reducing the number of dishes served at meals at ryokan. Traditional kaiseki cuisine served at Japanese inns consists of several artistically arranged dishes. By narrowing down the number of courses, the ryokan were able to consolidate food procurement and provide meals using local ingredients, thereby reducing food waste.
