Ishikawa Farmstay: A Rural Retreat in Japan's Hidden Heartland - Day2

Farmstay Shunran no Sato: Experience & Lunch

After a sumptuous breakfast, we were ready for the day’s activities. Shunran no Sato has deep connections with the agricultural communities on the peninsula and provides a variety of activities so that you can experience this yourself. We decided on mushroom picking and fishing for local river fish. We found some huge white Samatsutake mushrooms as big as our heads and a solitary trout in the local river, which we prepared for lunch inside the main Shunran no Sato residence. If you’re looking for a little more leisurely activity, the tent saunas along the river will get you sweating out all your body’s toxins before rinsing off with a refreshing swim in the river.

Farmstay Shunran no Sato: Tea Ceremony

Next was our turn to try a traditional tea ceremony. Ms.Takeuchi has been teaching the art of tea ceremonies for over 20 years and loves to show guests how it is done. Although most tea ceremonies for travelers are limited to making and drinking the tea, this is a genuine experience, with Ms.Takeuchi explaining every step of the tea ceremony, from how to enter the room to unwrapping and eating the sweets to accompanying the tea.

Noto Italian Guest House Flatt

Flatt’s Noto is one of the most sought-after accommodation locations in the Noto Peninsula. With strikingly creative meals, a private outdoor bath, and spacious Japanese-style rooms, it is easy to understand why. Run by Ben and Chikako Flatt, they serve handmade Italian-style meals using local ingredients and traditional pickling techniques unique to the peninsula. Australian-born Ben was a head chef in restaurants in Sydney before moving to Noto, combining Italian cooking methods with Japanese ingredients and processes. After relaxing in the outdoor bath, we were met with an exquisite eight-course seasonal degustation menu, including tuna carpaccio with a homemade shiso sauce, aged, fermented fish, and creamy pasta on squid ink and ishiri fermented squid sauce base. Relaxed and full, we ended the day in our cozy Japanese futon mattresses for the night.
